I have a 1987 GT, 5.0 HO, 5 Speed. If I'm not mistaken, I believe they are 225 HP stock. What would be the most logistical and affordable way to reach 300 HP?

I made 299.6/341 at the tire with milled (58cc) gt40 irons, 1.72 rockers, cobra intake,stock cam, 75mm mass air, shortys with a xpipe and dynomax mufflers. Its not hard to get to the 300hp mark

I figure I'd be spending somewhwere between a grand and 1500, what woudl all that stuff roughly cost. I'm a painter and a body man, but I suck as a mechanic

You could easily get it done with heads, cam, and intake. It all just has to work together and make the best combo.

My suggestion would be to use the painting/body work to your advantage and try and work out some deals with people. Im sure people would be willing to trade parts for body/paint work.
