Soy is not only a dairy substitute, its a beneficial protein as well. It does the same as milk by providing calcium, but it also contains all the essential amino acids and have been proven to lower your Low Density Lipoprotein (LDL or bad cholesterol), aid and prevent digestive problems, and help kidney filtration. The isoflavones contained within provide antioxidants that help boost the immune system and alleviate fluctuating estrogens levels related to menopause and PMS.
Those are just a few things I can think of. I can go on and on of some of the great things with soy substitution. But I think it comes down to a matter of taste and availibility in locating many soy rich foods. I am trying to stick with a more beneficial and healthful diet to compliment my exercise regimen. I have a long way to go, but you have to start somewhere right?
