What's your favorite (healthy) chicken recipe?

I got given a diet and of course, it includes plenty of chicken breast. I love making me some Caribbean Jerk chicken and I eat it about once a week. I'm probably gonna eat it a couple times a week now, but once I do, it's gonna get old fast. I need some variety. Post up what you like and how you make it, ingredients, etc. I need some ideas.

I've been mixing some italian dressing, olive oil, and emeril's essence in there recently. I've got 5 of his "essences" and they're all different and all pretty good.

well i'm no help then, i don't like anything on my chicken. Just off the grill and on my plate. Hell, the only thing i put on my oven roasted chicken breast sandwich at subway is lettuce, cheese, and honey mustard lol

I keep it easy, I throw a little Italian dressing on the chicken while it is grilling and call it done.

I usually do more than that. I do pepperjack cheese, lettuce, tomato, bell pepper, and chipotle southwest sauce.

Boil 2 chicken breasts in a large pot until done. Shred them with a fork (think pulled chicken if you will). Store this in the fridge and I get about a weeks worth of soft chicken tacos out of it. Add lettuce, tomato, black olives, and a little Spiracha to taste. Excellent....

I do a chicken breast

lime/cilantro bake in a bag

baked on a sheet pan then coated with franks red hot sauce (best hot wing replacement ever)

make a sauce with some red curry paste, some skim milk, and lime juice, then stir fry it with a bunch of veggies

I still use Stangins Chicken noodle soup with an ass load of chicken breast added to it.

Lawrys makes some very good marinades. low carb usually 1-2g for a few of the flavors.

I'll buy the bulk bag of breasts from Walmart, fill it with one bottle of marinade then toss it in the fridge for a day or so.

I meant all of them in the bag. I do like matt does, I throw them in a bag with some marinade and let them sit a day in the fridge. I have a bag sitting in there at almost all times. Brookshire's had a deal, buy one get one for a penny, so I bought 6 bags. Cost about thirty bucks. Half the time I just grab one of the cooked ones and eat it cold like a slice of pizza. Which gives me an idea.

hmmm....

breast + a little sauce on top + cheese + a couple slices of pepperoni

zap for a couple minutes. might try that out.

I tend to like the beef marinade better, due to the spice.

Average sized chicken breast is around 20-35 grams of protein.
For you, 2-3 would suffice.
I eat 2-3 sometimes, then 6-8 in one sitting on the weekends...as I like to pig out on the weekends.

Avocado Topped chicken
Ingredients:
1/4 cup extra virgin olive oil
2 tablespoons fresh lime juice
1 teaspoon dried Cilantro Leaves
3/4 teaspoon salt
1/4 teaspoon Garlic Powder
1/8 teaspoon crushed red pepper
4 boneless skinless chicken breasts tenderized
1/4 teaspoon crushed Paprika
3/4 cup finely chopped tomatoes
1 medium avocado, peeled, seeded and diced
Directions:
1. Whisk oil, lime juice, cilantro, salt, garlic powder and red pepper in medium bowl until well blended. Place chicken in large reseal able plastic bag or dish. Spoon 1/2 of the oil mixture over chicken and turn it to coat well. Set aside remaining oil mixture.

My quick and easy chicken recipe.

On Sunday night I bake 5 chicken breasts in the oven and only use seasoned pepper that has no salt in it for seasoning. I take them to work and leave them in the fridge. When it's lunch time I wrap one chicken breast in a wet paper towel and nuke for 1 to 1 1/2 minutes. I cut it up and put it in a bowl and mix in some home made salsa that I make by just putting tomatoes and jalapenos in the blender with just a tiny bit of salt. I also make the salsa on Sunday night and keep it in a jar at work. It's not a big deal if you just do your prep work on Sunday.
