The most common would be caliper testing, it's not the most accurate, but just about all gyms have a set of calipers and someone trained to use them. If you are willing to spend the money there are electruical impedance scales (they measures the resistance to electrical current through the body, fat has different conductive propertiues than lean mass) out there that can be as accurate or more so than calipers, but be prepared to spend a couple hundred bucks on a good one.
