If I have a domain name registered already, and I setup an email server I can create my own emails @mydomain.com right?

Yeah. You should just need the incoming and outgoing mail server names, and you should be fine. I could be wrong though.

Do you have someone serving up your MX records? You'll need to either host your own domain name servers or have someone do it for you.

Once that is done, just assign the domain name the IP address of your server, install some mail software and start hosting your own mail.
