Limit software installation rights via windows elite user managment application, also block pornographic websites, you are running a proxy/gateway right?. Monitoring him wont get rid of viruses.

Its not so much to limit what he does, its his computer with our software, I need to catch him doing this at work, his downloading shit was effecting our software and making a headache for me; so I need to catch him doing it so I can void his contact:)

IMHO the hacker trojans are pretty cool and they are free. Sub7 would probably be the best thing for you to pull screen shots and video, key logger, etc..
