What should I do with this? I want something that does not need a lot of attention all the time. Something simple but that looks good.

Concrete, stained green. :)
North/south facing home? I'd not put a bunch of trees there and block the view then. Maybe a couple of simple bushes.

I thought about the green concrete already. Lol...
The sun faces the back of the house. Thought about some white rocks with a few easy to maintain plants or shrubs.

maybe some pom pom trees with some seasonal flowers??

I would start off with Ground Clear to kill anything and prevent stuff from growing once it is done.
Then I would put some monkey grass in front with some liriopa then maybe some small willow grasses in back
You can call my landscaper Francisco and he will help you out on labor and plants.

Nope, No Ballin Here! I just budget my money & don't have any car payments.

Call Francisco and let him know your budget he will work within it easily He is fair and honest.
That is a simple enough job that a small roto tiller and then some peat moss and mulch should make it pretty easy to do.
My wife wanted a Little Elm tree forever so for mothers day me and the kids planted a small island for her with some small grasses with yellow flowers and then a Little Elm in the middle she sees it when she leaves and comes home from work and it took around 1 hour to do most of it was with the ryobi and a rototiller attachment loosening the dirt up to mix with the peat moss.

How much of this do I have to dig up? I don't want any grass there at all.
I would like to outline the slab with some sort of brick or rock then fill it up with white rocks or some type of mulch. Would also like to add some type of small shrubs or plants in there.
I'm just not sure of all the steps I have to take to get there. I don't want to have any standing water either. Anyone done this type of stuff?

I'll tell you this. The white rocks look good for a while, then get dirty fast! It's like every black piece of crap that floats by sticks to the rocks! I had mine for a year, and threw them all away! Actually, I dug a big hole in the back and buried them.
Lava rocks are just as bad, leaves get caught between the rocks and do NOT want to come out!

Dig out the grass/weeds and I think a spiral bush on each side would look good, maybe some local flowers that like the weather down there and mulch.
Get the small/medium spiral bushes and put one in front of each column. Maybe a couple hibiscus plants, nice color and lots of green

Whould it be ok to still outline the the area between the slab & the dirt/grass with some type of stone or rock?
Once I dig up all the grass & weeds then how much dirt do I have to use before I start adding the mulch on top? Should the mulch be leveled with the slab or should it be sitting higher?

Depends on what type of border you would want to instal, but my choice would be leave it as is since it is surrounded by concrete. Dig the dirt down an inch or so (as long as it is decent dirt and not all rocks like ours was), plant some flowers/shrubs and add a little mulch so it is even with the concrete.
